Brilliant Black Pepper Honeycomb

I know it might sound like I've gone a bit Heston on you but trust me this stuff is bloody gorgeous!

Once you've done family time and love and maybe a trip to church, we all know Easter is all about the food and chocolate eggs are getting majorly expensive and a bit rubbish so why not do something a bit different this year and make your own gifts!? Honeycomb is a great sweet treat in all shapes and forms but adding a good grind of black pepper takes the delicious into the SUBLIME. The recipe itself is super easy and will be done from start to finish in ten minutes or so - ideal! 

Brilliant Black Pepper Honeycomb

200g caster sugar 
35g honey (the fanciest you can afford!)
70g liquid glucose (available in the baking section of supermarkets) 
2 tbsp water 
10g bicarbonate of soda 
freshly ground black pepper

Place the sugar, honey, glucose and water into a pan and boil until the liquid reaches 150C/300F on a sugar thermometer. (This amount will double in volume so make sure you have a big enough pan.) 

Add the bicarbonate of soda and quickly whisk to combine. The mixture will rise up in the pan when the bicarbonate of soda is added so be careful. Immediately pour the mixture into a non-stick tray or onto a sheet of baking/greaseproof paper. Add several grindings of freshly ground black pepper and set aside to cool, uncovered. Break into shards and serve or wrap up in cellophane for gifting.
