Healthy But Hearty Chilli Con Carne

For me, the best meals are those that taste divine but that also do you a bit of good too. This chilli is exactly that type of meal. It's super deep in flavour and it provides a rich earthiness as well as a warming spiciness that will both keep you toasty in this colder weather and wake up your senses.

I like to serve mine with a good dollop of zero fat fromage frais to really balance out all the flavours and to cool your palette down if you struggle with spices. A handful of fresh parsley and mint and a warm tortilla wrap for dipping in turn a simple bowl of chilli into a truly special meal. You've really gotta give this a go!

Healthy But Hearty Chilli Con Carne
Serves 4-6

low calorie cooking spray
1 large onion, peeled and finely chopped
500g extra lean minced beef
2 garlic cloves, peeled and crushed
2 green chillies, chopped
2 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
a pinch of cayenne pepper
1 green pepper, finely chopped
4 plum tomatoes, chopped
300ml beef stock
salt and pepper
400g can of red kidney beans
400g tinned tomatoes
1 tsp crushed chillies
fat free natural fromage frais
a large handful of freshly chopped parsley and mint
a pinch of paprika, to garnish

Spray a large heavy-based saucepan with low calorie cooking spray and stir-fry the onion and beef gently over a medium-low heat for 6-8 minutes. Add the garlic, fresh chillies, cumin, coriander, paprika and cayenne pepper and continue frying, stirring occasionally, for 2-3 minutes.

Add the green pepper, fresh tomatoes and stock. Stir well and bring to the boil. Reduce the heat and simmer gently for 15 minutes, until the liquid is reduced. Season to taste and add the red kidney beans, tinned tomatoes and crushed chillies. Heat through gently for about 5 minutes.

Serve topped with a swirl of fromage frais and sprinkle with the chopped herbs and paprika. Eat on its own with a warm tortilla or with fluffy white rice or piled on a jacket potato.
